South-West reds: Fronton, Madiran, Gaillac, Cahors. Structured or supple, chosen to stand up to charcuterie.
Dry or sweet Jurançon, white Gaillac, Côtes de Gascogne: bright whites for cheese and mild evenings.
Local rosés, fresh and dry, served at the right temperature — the terrace apéritif bottle.
Crémant de Limoux, blanquette, champagne: the bottle for occasions, delivered already chilled with its bucket.
Brewed in the Ariège: blonde, amber, IPA, wheat. The selection follows whatever has just been brewed.
Artisan lemonades, pressed juices, mountain cordials, sparkling water: nobody toasts with an empty glass.
